I agree that "how are you?" has become a social formality that has lost its meaning. I try to say, "hi, it's so nice to see you" instead of "hi, how are you?" when I'm passing someone on the sidewalk/in the hall. But, for more in depth conversations, I like the idea of picking a color - I'll test that out too. : )
